Read instructions and get ready to cook
Prepare duck
Preheat oven to 400°F (200°C). Score duck skin in a crosshatch pattern, being careful not to cut into meat. Season both sides with 1/2 tsp salt and 1/4 tsp pepper.
Sear duck
Place duck skin-side down in a cold skillet. Cook over medium heat until fat renders and skin is crisp, 8-10 min. Flip and cook 2 min more.
Finish duck in oven
Transfer skillet to oven. Roast until duck reaches desired doneness (135°F for medium-rare), 8-10 min. Transfer to a plate, tent with foil.
Make sauce
Mince ginger and garlic. In a small saucepan, combine honey, soy sauce, vinegar, sesame oil, ginger, garlic, 1/2 tsp salt, 1/4 tsp pepper. Simmer 2-3 min.
Slice and serve
Slice duck breasts. Serve with sauce spooned over top.
