Prepare the pork
Preheat the oven to 325°F (165°C). Score the fat cap of the pork shoulder in a diamond pattern, about 1/4-inch deep.
Season the pork
In a small bowl, mix together the salt, black pepper, dried thyme, and dried rosemary. Rub the spice mixture all over the pork shoulder.
Prepare the vegetables
Cut the onion into thick slices and place them in the bottom of a roasting pan. Peel the garlic cloves and add them to the pan.
Roast the pork
Place the seasoned pork shoulder on top of the onions and garlic in the roasting pan. Pour the chicken broth into the bottom of the pan. Cover the pan tightly with foil and roast in the preheated oven for 3 hours.
Prepare the glaze
In a small saucepan, whisk together the honey, brown sugar, Dijon mustard, and olive oil. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the glaze is smooth.
Glaze the pork
After 3 hours, remove the foil from the roasting pan. Brush the pork shoulder generously with the prepared glaze. Return the pan to the oven, uncovered, and continue roasting for an additional 45-60 minutes, brushing with the glaze every 15 minutes, until the pork is deeply caramelized and tender.
Rest and serve
Remove the pork shoulder from the oven and let it rest for 20-30 minutes before slicing and serving. Enjoy with your favorite side dishes.
