Boil the Eggs

Place 12 whole eggs in a large pot and cover with water. Bring to a boil, then cover, turn off the heat, and let sit for 12 minutes. Transfer eggs to an ice bath to cool.

Prepare the Filling

Halve and pit 1 avocado. Scoop the avocado flesh into a bowl. Finely chop 1/4 cup of fresh cilantro and add it to the bowl along with 1 tablespoon of lime juice, 1 teaspoon of Dijon mustard, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mash and mix until smooth.

Peel and Halve the Eggs

Once cooled, peel the eggs and cut them in half lengthwise. Remove the yolks and add them to the avocado mixture.

Mix and Fill

Mash the egg yolks into the avocado mixture until well combined. Spoon or pipe the mixture back into the egg white halves.

Garnish and Serve

Lightly sprinkle each egg half with paprika for garnish. Serve the green deviled eggs chilled or at room temperature.
