Wash the zucchini and cut them in half lengthwise. Using a spoon, scoop out the seeds and flesh, leaving a 1/4-inch thick shell. Place the zucchini boats in the prepared baking dish.

Dice the tomatoes. Peel and finely chop the onion. Peel and mince the garlic cloves. Roughly chop the basil leaves. Shred the mozzarella cheese.
