Read instructions and get ready to cook
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Prepare the Halloumi
Cut halloumi cheese into 1-inch cubes.
Prepare the Zucchini
Wash zucchini and cut into 1-inch thick rounds.
Prepare the Bell Peppers
Wash bell peppers, remove seeds and stems, and cut into 1-inch squares.
Prepare the Onion
Peel red onion and cut into 1-inch chunks.
Prepare the Tomatoes
Wash cherry tomatoes and remove stems.
Make the Marinade
In a small bowl, whisk together olive oil, juice of half a lemon, oregano, salt, and pepper.
Toss Vegetables in Marinade
Place all prepared vegetables (not the cheese) in a large bowl and pour marinade over them. Toss gently to coat.
Assemble the Skewers
Thread the marinated vegetables and halloumi cubes onto skewers, alternating between cheese and vegetables.
Preheat the Grill
Preheat grill or grill pan to medium-high heat.
Grill the Skewers
Place skewers on the hot grill and cook for 2-3 minutes per side, turning occasionally, until vegetables are tender and halloumi is golden brown with grill marks.
Prepare Lemon Wedges
Cut the remaining half lemon into wedges for serving.
Serve
