Preheat the oven

Preheat the oven to 425°F (220°C).

Prepare the potatoes

Wash and dry the russet potatoes. Cut thin, vertical slices into each potato, stopping about 1/4 inch from the bottom so that the potato remains intact.

Prepare the garlic and rosemary

Mince the garlic cloves and finely chop the rosemary leaves.

Season the potatoes

In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Brush this mixture over the potatoes, making sure it gets between the slices.

Bake the potatoes

Place the seasoned potatoes on a baking sheet and bake for 50-60 minutes, or until the potatoes are crispy on the outside and tender on the inside.
