Prepare spinach

Rinse the spinach leaves thoroughly and remove any tough stems. Blanch the spinach in boiling water for 1-2 minutes, then drain and rinse with cold water. Squeeze out excess water and chop the spinach.

Prepare onion and garlic

Peel and finely chop the onion. Peel and mince the garlic cloves.

Prepare cheese and breadcrumbs

Shred the Gruyère cheese and grate the Parmesan cheese. Combine the cheeses in a bowl and set aside. In a separate bowl, mix the breadcrumbs with 2 tablespoons of the melted butter.

Preheat Oven

Preheat the oven to 375°F (190°C).

Sauté onion and garlic

In a large saucepan, melt the remaining butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.

Make cheese sauce

Add the flour to the saucepan and stir to combine with the butter and onion mixture. Gradually whisk in the milk, stirring constantly to prevent lumps. Add the nutmeg, salt, and black pepper. Cook, stirring frequently, until the sauce thickens, about 5 minutes. Remove from heat and stir in 3/4 cup of the shredded cheese mixture.

Combine spinach and sauce

In a large bowl, combine the chopped spinach and the cheese sauce, stirring until the spinach is evenly coated.

Assemble gratin

Transfer the spinach mixture to a greased 9x13-inch baking dish. Top with the remaining shredded cheese and the buttered breadcrumbs.

Bake gratin

Bake the spinach gratin in the preheated oven for 25-30 minutes, or until the top is golden brown and the sauce is bubbly.

Remove the gratin from the oven and let it cool for 5-10 minutes before serving hot as a side dish.
