Steps
Read instructions and get ready to cook
Preheat the oven
Preheat the oven to 425°F (220°C).
Prepare the garlic and herbs
Mince the garlic cloves. Remove the leaves from the rosemary and thyme sprigs and finely chop them. Finely chop the parsley leaves.
Mix the herb coating
In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, chopped parsley, olive oil, salt, and black pepper to form a paste.
Prepare the beef tenderloin
Trim any excess fat or silverskin from the beef tenderloin. Pat the tenderloin dry with paper towels.
Coat the beef tenderloin
Rub the herb paste evenly over the entire surface of the beef tenderloin, pressing it gently to adhere.
Roast the beef tenderloin
Place the coated beef tenderloin on a rack in a roasting pan. Roast in the preheated oven for 25-30 minutes for medium-rare, or until an instant-read thermometer inserted into the thickest part of the tenderloin reads 135°F (57°C).
Rest the beef tenderloin
Remove the beef tenderloin from the oven and transfer it to a cutting board. Tent the tenderloin loosely with aluminum foil and let it rest for 10-15 minutes.
Slice and serve
Slice the Herbed Beef Tenderloin into 1-inch thick rounds. Arrange the slices on a serving platter and serve hot with your favorite side dishes.
