Steps
Read instructions and get ready to cook
Prepare the marinade
In a small bowl, whisk together olive oil and juice from the lemon.
Prepare the herbs and garlic
Mince the garlic cloves and finely chop the rosemary and thyme leaves.
Add herbs and garlic to marinade
Add minced garlic, chopped rosemary, and thyme to the olive oil and lemon juice mixture. Whisk to combine.
Season the steak
Season both sides of the flank steak with salt and black pepper.
Marinate the steak
Place the seasoned flank steak in a shallow dish and pour the marinade over the steak, turning to coat both sides. Let the steak marinate at room temperature for 30 minutes.
Preheat the grill
Preheat an outdoor grill or grill pan to medium-high heat.
Grill the steak
Remove the steak from the marinade and discard the remaining marinade. Place the steak on the hot grill and cook for 4-5 minutes per side for medium-rare, or longer if desired.
Let the steak rest
Remove the steak from the grill and let it rest on a cutting board for 5 minutes to allow the juices to redistribute.
Slice and serve
Slice the steak thinly against the grain and serve hot with your favorite side dishes.
