Steps
Read instructions and get ready to cook
Preheat the oven
Preheat the oven to 325°F (165°C).
Prepare the herb mixture
Remove the leaves from the rosemary and thyme stems. Finely chop the herbs and mince the garlic cloves. In a small bowl, combine the chopped rosemary, thyme, minced garlic, olive oil, salt, and black pepper. Mix well to create a paste.
Prepare the leg of lamb
Place the leg of lamb in a roasting pan. Using a sharp knife, make several shallow cuts all over the surface of the lamb.
Rub the herb mixture
Rub the herb mixture all over the leg of lamb, making sure to push it into the cuts for maximum flavor penetration.
Roast the lamb
Place the roasting pan with the lamb in the preheated oven. Roast for 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare, or your desired level of doneness.
Let the lamb rest
Remove the leg of lamb from the oven and tent it loosely with aluminum foil. Let it rest for 15-20 minutes to allow the juices to redistribute.
Carve and serve
Carve the Herbed Leg of Lamb into slices and arrange them on a serving platter. Serve hot, accompanied by your favorite side dishes.
