Prepare the dough

In a large bowl, mix together the bread flour, active dry yeast, sugar, and salt. Gradually add the warm water, stirring until a dough forms.

Knead the dough

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until the dough is smooth and elastic.

Let the dough rise

Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the bagels

Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a ball, then use your thumb to poke a hole through the center of each ball. Stretch the dough to form a bagel shape, about 4 inches in diameter.

Let the bagels rise

Place the shaped bagels on a greased baking sheet, cover with a damp towel, and let them rise for another 30 minutes.

Preheat the oven and prepare the water bath

Preheat the oven to 425°F (220°C). In a large pot, bring 2 quarts of water to a boil. Beat the egg in a small bowl to make an egg wash.

Boil and bake the bagels

Carefully place 2-3 bagels at a time into the boiling water. Boil for 1 minute on each side, then remove with a slotted spoon and place back on the baking sheet. Brush the boiled bagels with the egg wash and sprinkle with sesame seeds and poppy seeds.

Bake and serve

Bake the bagels for 20-25 minutes, or until golden brown. Remove from the oven and let cool on a wire rack for at least 15 minutes before slicing and serving.
