Prepare the dough
In a large bowl, mix 4 cups of flour, 1 tablespoon of active dry yeast, 1/4 cup of sugar, and 1 1/2 teaspoons of salt.
Add butter and milk
Cut 1 cup of unsalted butter into small cubes and add it to the flour mixture. Pour in 1 cup of cold milk and mix until a dough forms.
Knead the dough
On a lightly floured surface, knead the dough for 5-7 minutes, or until smooth and elastic.
Chill the dough
Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or overnight.

On a lightly floured surface, roll out the chilled dough into a large rectangle, about 1/4-inch thick.
Add the butter layer
Place the chilled butter rectangle in the center of the dough. Fold the dough over the butter, sealing the edges.
Laminate the dough
Roll out the dough into a long rectangle, then fold it into thirds like a letter. Wrap the dough in plastic wrap and chill for 30 minutes. Repeat this process two more times.
Shape the croissants
Roll out the chilled dough into a large rectangle, about 1/4-inch thick. Cut the dough into 12 equal-sized triangles.
Add the chocolate
Place a piece of dark chocolate at the wide end of each triangle. Roll up the croissants, starting from the wide end and tucking the point under the croissant.
Proof the croissants
Place the croissants on a lined baking sheet, cover with a damp cloth, and let them rise in a warm place for 1-2 hours, or until doubled in size.
