Preheat the oven

Preheat the oven to 375°F (190°C).

Prepare the bell peppers

Cut 6 bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves in a baking dish, cut-side up.

Cook the ground beef

In a large skillet over medium-high heat, cook 1 lb of ground beef until browned and no longer pink, breaking it up with a wooden spoon as it cooks. Drain any excess fat.

Prepare the vegetables

While the beef cooks, finely chop 1 onion and mince 3 garlic cloves.

Add vegetables and seasonings

Add the chopped onion, minced garlic, and 1 oz of taco seasoning mix to the skillet with the ground beef. Sauté for 3-4 minutes, or until the onion is softened and translucent.

To the skillet, add 14.5 oz of diced tomatoes (with their juices) and 15 oz of drained and rinsed black beans. Stir well to combine and simmer for 5 minutes.

Spoon the beef mixture into the bell pepper halves, dividing it evenly among the 12 halves.

Sprinkle 1 cup of shredded cheddar cheese over the stuffed peppers. Bake for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
