Prepare the kimchi

Drain the kimchi, reserving 1 teaspoon of the juice. Chop the kimchi into small pieces.

Prepare the green onions

Wash thoroughly. Thinly slice, separating white and green parts.

Prepare the garlic

Peel the garlic clove. Mince finely.

Make the kimchi mixture

In a small bowl, combine chopped kimchi, minced garlic, white parts of green onions, and reserved kimchi juice. Mix well.

Prepare the cheese

Grate both cheeses. Mix them together in a bowl.

Create the gochujang spread

In a small bowl, mix gochujang, mayonnaise, and sesame oil until smooth.

Prepare the bread

Lay out the bread slices on a clean work surface.

Assemble the sandwiches

Spread the gochujang-mayo mixture on one side of each bread slice. On two of the bread slices (which will be the bottoms), place half of the grated cheese mixture. Top the cheese with the kimchi mixture, dividing evenly between the two sandwiches. Sprinkle the remaining cheese on top of the kimchi. Place the remaining bread slices on top, gochujang-mayo side down.

Prepare for cooking

Spread butter evenly on the outside of each sandwich (top and bottom).

Heat the pan

Heat a large skillet or griddle over medium-low heat.

Cook the sandwiches

Place the sandwiches in the heated skillet. Cook for 3-4 minutes on the first side until golden brown and crispy.

Flip and continue cooking

Carefully flip the sandwiches. Cook for another 3-4 minutes until the second side is golden brown and the cheese is completely melted. If needed, cover the pan with a lid to help the cheese melt without burning the bread.
