In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.

Evenly distribute the cooked sausage, chopped spinach, and grated cheddar cheese among the greased muffin cups. Pour the egg mixture over the sausage, spinach, and cheese, filling each cup about 3/4 full.
