Read instructions and get ready to cook
Prepare batter
In a large bowl, whisk together all-purpose flour, rice flour, eggs, water, and salt until smooth.
Prepare scallions
Wash and thinly slice green onions.
Prepare squid
Clean squid and slice into thin rings.
Prepare shrimp
Peel and devein shrimp, then chop into small pieces.
Add ingredients to batter
Stir sliced green onions, squid rings, and chopped shrimp into the batter.
Heat pan
Heat a large non-stick skillet over medium heat and add 2 tablespoons of vegetable oil.
Cook pancake
Ladle 1/4 of the batter into the pan, spreading it evenly into a circle.
Flip pancake
Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes.
Repeat process
Remove pancake from pan and repeat steps 7-8 with remaining batter, adding oil as needed.
Prepare dipping sauce
In a small bowl, mix soy sauce, rice vinegar, sesame oil, and red pepper flakes.
Cut pancakes
Cut each pancake into wedges.
Serve
Arrange pancake wedges on a serving plate with the dipping sauce on the side.
