Prepare the lemons
Zest 2 of the lemons and set the zest aside. Juice all 4 lemons, yielding about 1 cup of lemon juice.
Prepare the mint
Rinse and pat dry 1 cup of fresh mint leaves. Finely chop the mint leaves.
Make the syrup
In a medium saucepan, combine 1 cup of granulated sugar and 3 cups of water. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved.
Add lemon juice and zest
Remove the syrup from the heat and stir in the lemon juice and reserved lemon zest.
Add mint
Stir in the chopped mint leaves and let the syrup cool to room temperature.
Strain the syrup
Pour the cooled syrup through a fine-mesh strainer to remove the mint leaves and lemon zest.
Freeze the granita
Pour the strained syrup into a shallow, freezer-safe dish. Place the dish in the freezer for 1 hour.
Scrape the granita
After 1 hour, use a fork to scrape the partially frozen syrup, breaking up any large chunks. Return the dish to the freezer.
Repeat scraping
Repeat the scraping process every 30 minutes for 3-4 hours, or until the granita is fully frozen and has a fluffy, icy texture.
Serve
Scoop the lemon and mint granita into chilled serving glasses and serve immediately.
