Steps
Read instructions and get ready to cook
Rinse the rice
Rinse the long-grain white rice under cold water until the water runs clear. Drain well.
Combine rice, water, and salt
In a medium saucepan, combine the rinsed rice, water, and salt. Stir to combine.
Cook the rice
Bring the rice mixture to a boil over high heat. Reduce the heat to low, cover the saucepan, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
Prepare the lemon
While the rice is cooking, zest and juice the lemon. Set aside.
Chop the parsley
Finely chop the fresh parsley leaves.
Melt the butter
In a small microwave-safe bowl, melt the unsalted butter.
Add lemon and butter to rice
Once the rice is cooked, remove the saucepan from the heat. Fluff the rice with a fork, then stir in the melted butter, lemon zest, and lemon juice.
Add parsley
Gently fold in the chopped parsley until evenly distributed.
Serve hot
Serve the Lemon White Rice hot as a side dish.
