Cook the lentils

Rinse the brown lentils and place them in a medium saucepan. Cover the lentils with water and bring to a boil. Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes or until the lentils are tender. Drain the lentils and set them aside to cool.

Prepare the vegetables

Grate the carrot. Finely chop the celery stalk and onion. Mince the garlic cloves.

Sauté the vegetables

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the grated carrot, chopped celery, chopped onion, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

Mash the lentils

In a large bowl, mash the cooked lentils with a potato masher or fork, leaving some texture.

Add remaining ingredients

To the mashed lentils, add the sautéed vegetables, egg, breadcrumbs, tomato paste, smoked paprika, ground cumin, salt, and black pepper. Mix well until all the ingredients are evenly combined.

Form the lentil patties

Divide the lentil mixture into 6 equal portions. Shape each portion into a patty, about 1/2 inch thick.

Cook the lentil burgers

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the lentil patties and cook for 4-5 minutes on each side, or until golden brown and heated through.

Assemble the burgers

Place each cooked lentil patty on a whole wheat hamburger bun. Add your favorite toppings, such as lettuce, tomato, onion, or avocado.
