Read instructions and get ready to cook
Rinse lentils
Rinse the lentils under cold water and pick out any debris or stones.
Chop vegetables
Peel and chop the onions, carrots, and celery stalks. Remove the seeds and stem from the red bell pepper and chop it into small pieces. Peel and mince the garlic cloves. Cut the tomatoes into small chunks.
Heat oil
In a large pot, heat the olive oil over medium heat.
Sauté vegetables
Add the chopped onions, carrots, celery, and red bell pepper to the pot. Sauté for 5-7 minutes or until the vegetables start to soften.
Add garlic and spices
Add the minced garlic, paprika, bay leaves, salt, and black pepper to the pot. Stir to combine and cook for an additional 1-2 minutes until fragrant.
Add lentils and water
Add the rinsed lentils and water to the pot. Stir to combine.
Bring to a boil
Bring the mixture to a boil over high heat. Reduce the heat to low and cover the pot.
Simmer stew
Let the stew simmer for 45-50 minutes or until the lentils are tender and the vegetables are cooked through.
Add tomatoes
Add the chopped tomatoes to the pot and stir to combine. Continue simmering for an additional 5-10 minutes.
Remove bay leaves
Remove the bay leaves from the pot and discard them.
Serve
Serve the Balkan Lentil Stew hot, accompanied by crusty bread if desired.
