Read instructions and get ready to cook
Preheat the Oven
Preheat oven to 400°F (200°C).
Prepare the Potatoes
Scrub potatoes thoroughly under running water to remove any dirt.
Bake the Potatoes
Pierce potatoes several times with a fork, then place directly on the middle oven rack and bake for 45-50 minutes until tender.
Cook the Bacon
While potatoes are baking, cook bacon in a skillet over medium heat until crispy, about 8-10 minutes.
Drain the Bacon
Transfer cooked bacon to a paper towel-lined plate to drain excess grease.
Chop the Bacon
Once cooled, chop bacon into small pieces.
Prepare the Green Onions
Wash green onions and thinly slice, separating white and green parts.
Grate the Cheese
Grate the cheddar cheese if not already shredded.
Cool the Potatoes
Remove baked potatoes from oven and let cool until they can be handled, about 10 minutes.
Cut the Potatoes
Cut each potato in half lengthwise.
Scoop Out Potato Centers
Using a spoon, carefully scoop out the potato flesh, leaving about 1/4 inch of potato attached to the skin.
Prepare the Seasoning
In a small bowl, mix salt, pepper, and garlic powder.
Brush with Oil
Brush both sides of potato skins with olive oil.
Season the Skins
Sprinkle the inside of each potato skin with the seasoning mixture.
Bake the Skins
Place potato skins skin-side up on a baking sheet and bake for 10 minutes.
Flip and Continue Baking
Flip potato skins over and bake for an additional 5 minutes until edges are crispy.
Add Cheese and Bacon
Remove potato skins from oven, fill each with shredded cheddar cheese and chopped bacon.
Bake Until Cheese Melts
Return to oven and bake for 3-5 minutes until cheese is melted and bubbly.
Garnish with Green Onions
Remove from oven and sprinkle with sliced green onions and a light dusting of paprika.
Serve with Sour Cream
Arrange potato skins on a serving platter with sour cream on the side for dipping.
