Read instructions and get ready to cook
Preheat the oven
Preheat oven to 375°F (190°C). Grease a baking dish.
Cook the pasta
Bring a large pot of water to a boil. Add salt and pasta. Cook until al dente, about 8-9 minutes. Drain and set aside.
Prepare the lobster
If using whole lobster, cook in boiling water for 8 minutes. Remove meat from shell and cut into bite-sized pieces. If using pre-cooked lobster meat, simply cut into chunks.
Prepare the garlic
Peel and mince the garlic.
Make the cheese sauce
In a large saucepan, melt butter over medium heat. Add minced garlic and cook for 30 seconds. Add flour and whisk for 1-2 minutes to make a roux. Gradually add milk, whisking constantly to prevent lumps. Cook until sauce thickens, about 5-7 minutes. Season with salt and pepper.
Add the cheese
Remove sauce from heat. Add cheeses, one handful at a time, stirring until melted. Reserve 1/2 cup of cheese for topping.
Combine pasta and sauce
Add cooked pasta to the cheese sauce. Stir to coat evenly.
Add the lobster
Gently fold in the lobster meat, being careful not to break it up too much.
Transfer to baking dish
Pour the mixture into the prepared baking dish.
Prepare the topping
Melt remaining tablespoon of butter. Mix with breadcrumbs. Sprinkle reserved cheese over the pasta. Top with buttered breadcrumbs.
Bake
Bake for 25-30 minutes until bubbly and golden brown on top.
Rest and serve
Let stand for 5 minutes before serving. Serve hot.
