Read instructions and get ready to cook
Prepare ingredients
Cut tofu into 1-inch cubes. Mince garlic and ginger. Chop scallions, separating white and green parts.
Make sauce mixture
In a small bowl, mix soy sauce, cornstarch, and water. Set aside.
Cook pork
Heat oil in a wok over medium-high heat. Add ground pork and cook until browned, about 3-4 minutes.
Add aromatics
Add minced garlic, ginger, and white parts of scallions. Stir-fry for 30 seconds until fragrant.
Add flavorings
Stir in doubanjiang, fermented black beans, and Sichuan peppercorns. Cook for 1 minute.
Add tofu
Gently add tofu cubes to the wok. Stir carefully to coat with the sauce without breaking the tofu.
Simmer
Pour in the sauce mixture. Simmer for 3-5 minutes until the sauce thickens slightly.
Finish the dish
Stir in chili oil and green parts of scallions. Cook for another minute.
Serve
Transfer to a serving bowl and serve hot with steamed rice.
