Read instructions and get ready to cook
Prepare marinade
In a bowl, mix tequila, 2 tablespoons lime juice, minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
Form and marinate patties
Shape the ground beef into 4 patties. Place in a shallow dish and pour marinade over them. Refrigerate for 1 hour.
Prepare salsa
Dice tomatoes and red onion. Mince jalapeño and cilantro. Mix in a bowl with olive oil and 1 tablespoon lime juice.
Prepare citrus butter
Mix softened butter with remaining lime juice and zest from one lime.
Preheat grill
Preheat grill to medium-high heat.
Grill burgers
Remove patties from marinade and grill for 4-5 minutes per side, or until desired doneness.
Add cheese
Top each patty with a slice of pepper jack cheese during the last minute of grilling.
Toast buns
Brush the inside of the buns with citrus butter and toast on the grill for 1-2 minutes.
Assemble burgers
Place cheese-topped patties on bottom buns, add a generous spoonful of salsa, and cover with top buns.
Garnish
