Prepare the brine

In a large pot, combine the water, kosher salt, and brown sugar. Stir until the salt and sugar have dissolved. Let the brine cool to room temperature.

Brine the turkey

Remove the giblets and neck from the turkey cavity. Submerge the turkey in the cooled brine, making sure it is fully covered. Refrigerate the turkey in the brine for 12-24 hours.

Prepare the marinade ingredients

Zest and juice the lemons and oranges. Separate the garlic cloves and peel them. Remove the leaves from the rosemary and thyme sprigs. Chop the sage leaves.

Make the marinade

In a food processor, combine the lemon zest and juice, orange zest and juice, peeled garlic cloves, rosemary leaves, thyme leaves, chopped sage, softened butter, olive oil, black pepper, and 1 tablespoon of the used brine. Process until smooth.

Marinate the turkey

Remove the turkey from the brine and pat it dry with paper towels. Rub the marinade all over the turkey, inside and out. Place the turkey in a large resealable bag or covered container and refrigerate for at least 2 hours, or up to 24 hours.

Preheat the oven

Preheat the oven to 325°F (165°C). Remove the turkey from the refrigerator and let it come to room temperature for 30 minutes.

Roast the turkey

Place the marinated turkey on a rack in a roasting pan, breast-side up. Roast the turkey for approximately 15 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

Rest and serve

Remove the turkey from the oven and let it rest for 20-30 minutes before carving. Serve the marinated whole turkey hot, garnished with additional herbs if desired.
