Prepare the corn

If using fresh corn, husk and cook 4-5 ears (either grill, boil, or roast). Cut kernels from cobs. If using frozen corn, thaw and drain well. If using canned corn, drain thoroughly.

Char the corn (optional)

If desired, heat a skillet over high heat. Add corn kernels and cook without stirring for 3-4 minutes until charred in spots. Stir and continue cooking for another 2-3 minutes. Let cool.

Prepare the aromatics

Finely dice the onion. Mince the garlic. Chop the cilantro.

Prepare the lime

Zest one lime to get 1 teaspoon of zest. Cut limes in half and squeeze to extract juice.

Mix the dip base

In a large bowl, combine mayo, most of the cheese (reserve some for topping), chili powder, salt, and pepper. Add lime zest and juice. Mix well.

Combine ingredients

Add corn, diced onion, minced garlic, and most of the cilantro to the mayo mixture. Stir until well combined.

Adjust seasoning

Taste and adjust salt, pepper, or lime juice if needed.

Transfer and garnish

Spoon dip into a serving bowl. Top with remaining cheese and cilantro. Sprinkle with additional chili powder if desired.
