Read instructions and get ready to cook
Cook millet
In a saucepan, bring millet and water to a boil. Reduce heat, cover, and simmer until tender and water is absorbed, about 20 minutes. Set aside to cool.
Sauté vegetables
Heat 1 tablespoon olive oil in a skillet over medium heat. Dice onion and mince garlic. Add to skillet and cook until softened, about 5 minutes.
Cook mushrooms
Slice mushrooms and add to skillet with tamari. Cook until tender and liquid evaporates, about 8 minutes. Transfer mixture to a bowl.
Make patties
To the bowl, add cooked millet, ground flax, panko, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Mix well. Form into 4 patties.
Cook patties
Heat remaining 1 tablespoon olive oil in skillet over medium heat. Add patties and cook until browned and crisp, about 4 minutes per side.
Make mushroom sauce
Finely chop remaining mushrooms and garlic. Add to skillet with broth, cornstarch, 1/4 teaspoon salt and 1/8 teaspoon pepper. Bring to a simmer and cook until thickened, about 3 minutes.
Serve
Serve millet burgers topped with mushroom sauce. Enjoy!
