Pulse 1 1/2 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt in a food processor. Add 1/2 cup of cold, cubed unsalted butter and pulse until crumbly. Gradually add 3 tablespoons of cold water until the dough forms.
Wrap the dough in plastic and chill for at least 30 minutes.
Preheat the oven to 375°F (190°C).
Press the chilled dough into mini tart pans or a muffin tin, forming small cups.
Mix 1 cup of ground almonds with 1/2 cup of powdered sugar, 1 large beaten egg, 1 teaspoon of almond extract, and 2 tablespoons of milk to create the filling.
Spoon the almond filling into each dough cup, filling them three-quarters full.
Bake for 20 minutes, or until the filling is set and the crust is golden.
Let the tarts cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
