Prepare Pie Dough
In a large bowl, combine 2 cups of all-purpose flour and 1/2 teaspoon of salt. Cut in 3/4 cup of cold, unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, stirring until a dough forms. Divide the dough into 6 equal portions, wrap in plastic, and chill for at least 30 minutes.
Preheat Oven
Preheat your oven to 375°F (190°C).
Prepare Blackberry Filling
In a bowl, gently toss 2 cups of blackberries with 1/2 cup of sugar, 2 tablespoons of cornstarch, and 1 tablespoon of lemon juice until well coated.
Roll Out Dough
On a floured surface, roll out each dough portion into a circle about 1/8 inch thick. Place each circle into a muffin tin cup, forming a mini pie crust.
Fill and Seal Pies
Divide the blackberry filling evenly among the pie crusts in the muffin tin. Fold over any excess dough to partially cover the filling.
Bake
Bake in the preheated oven for 25 minutes, or until the crust is golden and the filling is bubbly.
Cool and Serve
Allow the mini pies to cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely. Serve once cooled.
