Preheat the oven

Preheat the oven to 350°F (175°C). Grease a 9-inch deep-dish pie plate.

Prepare the cake batter

In a large bowl, whisk together the all-purpose flour, 1 cup of sugar, 1/2 cup of unsweetened cocoa powder, baking powder, and 1/2 teaspoon of salt. In a separate bowl, mix together 1 cup of milk, vegetable oil, eggs, and 1 teaspoon of vanilla extract. Add the wet ingredients to the dry ingredients and mix until well combined.

Bake the cake

Pour the cake batter into the prepared pie plate. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.

Prepare the pudding layer

In a medium bowl, whisk together the instant chocolate pudding mix and the remaining 1/2 cup of milk until smooth and thickened. Spread the pudding evenly over the cooled cake.

Prepare the whipped cream

In a large bowl, beat the heavy cream, remaining 1/2 cup of sugar, remaining 1/4 cup of unsweetened cocoa powder, remaining 1/4 teaspoon of salt, and remaining 1/2 teaspoon of vanilla extract until stiff peaks form.

Assemble the pie

Spread the whipped cream evenly over the pudding layer. Sprinkle the chocolate shavings over the top of the whipped cream.

Refrigerate the Mississippi Mud Pie for at least 2 hours, or until set. Slice and serve chilled.
