Read instructions and get ready to cook
Prepare berries
Wash the strawberries, raspberries, and blackberries. Hull the strawberries and cut them into quarters. Place all the berries in a blender.
Chop cucumber and onion
Peel and roughly chop the cucumber. Peel and roughly chop the red onion. Add both to the blender.
Juice lime
Cut the lime in half and juice it. Add the lime juice to the blender.
Chop mint
Finely chop the mint leaves. Set aside.
Add remaining ingredients
Add the agave nectar and salt to the blender.
Blend gazpacho
Blend the ingredients until smooth and well combined. Taste and adjust the sweetness or seasoning as needed.
Chill gazpacho
Transfer the gazpacho to a covered container and refrigerate for at least 1 hour, or until chilled.
