Season beef
In a bowl, combine the ground beef, salt and pepper. Mix gently to distribute seasonings evenly.
Form patties
Divide beef mixture into 8 equal portions. Shape each portion into a thin patty, about 4-inches wide.
Stuff patties with mozzarella
Cut the mozzarella into 4 slices. Place 1 slice on 4 of the patties. Top with remaining patties and pinch edges to seal the cheese inside.
Prepare grill
Preheat an outdoor grill or grill pan to medium-high heat. Brush grates with olive oil.
Grill burgers
Cook burgers on the grill for about 5 minutes per side, or until they reach desired doneness.
Prepare toppings
While burgers cook, slice the tomato into rounds. Wash and dry the basil leaves.
Toast buns
During last minute of cooking, place buns cut-side down on grill to lightly toast.
Assemble burgers
Place cooked patties on toasted bun bottoms. Top each with tomato slices, basil leaves, and a drizzle of balsamic glaze. Cover with bun tops.
Serve
Serve the hot mozzarella beef burgers immediately. Enjoy!
