Read instructions and get ready to cook
Cook pasta shells
Cook the jumbo pasta shells in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
Prepare filling
In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and minced garlic cloves. Sauté until the mushrooms release their moisture and begin to brown, about 8-10 minutes.
Add spinach
