Prepare the crust
In a food processor, pulse the graham crackers until they form fine crumbs. Transfer the crumbs to a bowl and mix in the melted unsalted butter until well combined.
Press the crust into the pan
Press the graham cracker mixture evenly into the bottom of a 9-inch springform pan. Place the pan in the freezer while you prepare the filling.
Soften the ice cream
Let the chocolate ice cream sit at room temperature for 10-15 minutes, or until slightly softened.
Layer the ice cream and marshmallow cream
Spread half of the softened chocolate ice cream evenly over the graham cracker crust. Dollop the marshmallow cream over the ice cream and gently spread it into an even layer. Top with the remaining chocolate ice cream, smoothing the surface with a spatula.
Freeze the cake
Place the cake in the freezer for at least 6 hours, or until firm.
Prepare the chocolate ganache
In a small saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from heat and add the semisweet chocolate chips. Let sit for 1-2 minutes, then whisk until smooth and glossy.
Add the toppings
Remove the cake from the freezer and let it sit at room temperature for 5-10 minutes. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides. Arrange the marshmallows on top of the ganache.
Toast the marshmallows and serve
Using a kitchen torch, lightly toast the marshmallows until golden brown. If you don't have a torch, you can place the cake under the broiler for 1-2 minutes, watching carefully to avoid burning. Slice the No-Bake S'mores Ice Cream Cake and serve immediately.
