Prepare the vegetables
Peel and finely chop the onion. Peel and grate the carrots. Finely chop the celery stalks. Peel and mince the garlic cloves. Clean the mushrooms with a damp paper towel and finely chop them.
Toast and chop the nuts
Preheat the oven to 350°F (175°C). Spread the mixed nuts on a baking sheet and toast them in the oven for 8-10 minutes or until fragrant. Let the nuts cool slightly, then roughly chop them.
Sauté the vegetables
Heat the olive oil in a large skillet over medium heat. Add the chopped onion, grated carrots, chopped celery, minced garlic, and chopped mushrooms. Sauté for 8-10 minutes or until the vegetables are softened.
Combine ingredients
In a large bowl, combine the chopped nuts, sautéed vegetables, breadcrumbs, vegetable broth, thyme, rosemary, salt, and black pepper. Mix well until all ingredients are evenly distributed.
Prepare the loaf pan
Lightly grease a 9x5 inch loaf pan with olive oil. Press the nut and vegetable mixture firmly into the prepared loaf pan, smoothing the top with a spatula.
Bake the nut roast
Bake the nut roast for 45-50 minutes or until firm and the top is golden brown. Let the loaf cool in the pan for 10 minutes before slicing.
Prepare the sides
While the nut roast is baking, peel and cut the potatoes into 1-inch cubes. Toss the potato cubes with olive oil, salt, and pepper. Arrange them on a baking sheet and roast in the oven for 30-35 minutes or until crispy and golden brown. Trim the green beans and steam them for 5-7 minutes or until tender-crisp.
Serve the Nut Roast Dinner
Slice the nut roast and serve it with the roasted potatoes and steamed green beans. Enjoy this delicious and comforting vegan dinner.
