Peel and finely chop the onion. Peel and grate the carrots. Finely chop the celery stalks. Peel and mince the garlic cloves. Clean the mushrooms with a damp paper towel and finely chop them.

Preheat the oven to 350°F (175°C). Spread the mixed nuts on a baking sheet and toast them in the oven for 8-10 minutes or until fragrant. Let the nuts cool slightly, then roughly chop them.

Sauté the vegetables

Heat the olive oil in a large skillet over medium heat. Add the chopped onion, grated carrots, chopped celery, minced garlic, and chopped mushrooms. Sauté for 8-10 minutes or until the vegetables are softened.

In a large bowl, combine the chopped nuts, sautéed vegetables, breadcrumbs, vegetable broth, thyme, rosemary, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Lightly grease a 9x5 inch loaf pan with olive oil. Press the nut and vegetable mixture firmly into the prepared loaf pan, smoothing the top with a spatula.
