Read instructions and get ready to cook
Prepare dates
Pit and roughly chop 1 cup of dates.
Blend dates and nuts
In a food processor, combine the chopped dates and 1/2 cup of almonds. Process until a sticky mixture forms.
Add seeds
Add 1/4 cup of sunflower seeds, 1/4 cup of pumpkin seeds, 2 tablespoons of chia seeds, and 2 tablespoons of flaxseeds to the food processor.
Process mixture
Process until all ingredients are well combined and the mixture sticks together.
Add coconut oil
Add 1 tablespoon of coconut oil to the mixture and process again until well incorporated.
Shape bites
Using your hands, shape the mixture into small balls or bites.
Chill
Place the bites on a tray and refrigerate for at least 1 hour to set.
