Steps

Read instructions and get ready to cook

1
Prepare the octopus

Rinse the octopus under cold water. Remove the head and cut the tentacles into 2-inch pieces.

2
Sauté the onion and garlic

Heat the olive oil in a large, heavy-bottomed pot over medium heat. Finely chop the onion and mince the garlic cloves. Add the chopped onion and minced garlic to the pot and sauté until softened and fragrant, about 5 minutes.

3
Add the octopus

Add the octopus pieces to the pot and cook, stirring occasionally, until they release their liquid and begin to turn opaque, about 10 minutes.

4
Add the tomatoes and wine

Crush the tomatoes by hand or puree them in a blender. Add the crushed tomatoes, white wine, and tomato paste to the pot. Stir to combine.

5
Add the herbs and seasonings

Finely chop the parsley and basil leaves. Add the chopped parsley, basil, salt, black pepper, and red pepper flakes to the pot. Stir to incorporate.

6
Simmer the octopus

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and simmer gently for 1 to 1 1/2 hours, or until the octopus is tender.

7
Serve

Serve the Octopus in Tomato Sauce hot, with crusty bread or over your favorite pasta.
