Prepare the octopus
Rinse the octopus under cold water. Remove the head and cut the tentacles into 2-inch pieces.
Sauté the onion and garlic
Heat the olive oil in a large, heavy-bottomed pot over medium heat. Finely chop the onion and mince the garlic cloves. Add the chopped onion and minced garlic to the pot and sauté until softened and fragrant, about 5 minutes.
Add the octopus
Add the octopus pieces to the pot and cook, stirring occasionally, until they release their liquid and begin to turn opaque, about 10 minutes.
Add the tomatoes and wine
