Read instructions and get ready to cook
Prepare the ingredients
Cut salmon into small pieces. Cut cream cheese into small cubes. Chop chives finely.
Beat the eggs
Crack eggs into a bowl. Add salt and pepper. Beat until well combined but not frothy.
Heat the pan
Heat a non-stick skillet (8-10 inch) over medium heat. Add butter and swirl to coat the pan.
Cook the first omelet
Pour half the egg mixture into the pan. Tilt the pan to spread eggs evenly. Let cook undisturbed until edges begin to set, about 1-2 minutes.
Add fillings to first omelet
When the eggs are mostly set but still slightly wet on top, add half the salmon pieces to one half of the omelet. Add half the cream cheese cubes on top of the salmon. Sprinkle with half the chives.
Fold and finish first omelet
Using a spatula, carefully fold the empty half of the omelet over the filled half. Cook for another 30 seconds. Slide onto a plate.
Cook the second omelet
Repeat steps 3-6 with the remaining ingredients to make the second omelet.
Serve
Serve immediately while hot. Garnish with any remaining chives if desired.
