Preheat the oven

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Prepare the sweet potatoes

Peel the sweet potatoes and cut them into 1-inch cubes. Place the sweet potato cubes in a large bowl.

Season the chicken and sweet potatoes

In a small bowl, mix the olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper. Pour half of the seasoning mixture over the sweet potato cubes and toss to coat evenly. Arrange the seasoned sweet potatoes on one side of the prepared baking sheet. Rub the remaining seasoning mixture all over the chicken thighs and place them on the other side of the baking sheet.

Roast the chicken and sweet potatoes in the preheated oven for 40-45 minutes or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the sweet potatoes are tender and lightly caramelized. Remove the baking sheet from the oven and let the chicken rest for 5 minutes before serving.
