Prepare pork
Cut pork shoulder into 1-inch cubes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Brown pork
In a large pot, heat 2 tablespoons olive oil over medium-high heat. Brown pork cubes on all sides, about 5-7 minutes. Remove and set aside.
Prepare vegetables
Cut eggplant, zucchini, and bell peppers into 1-inch chunks. Dice onion and mince garlic.
Sauté vegetables

Add vegetables

Return pork to pot

Check pork

Adjust seasoning

Prepare basil
Chop fresh basil leaves.
Serve
Remove bay leaf. Serve hot, garnished with chopped fresh basil.
