Read instructions and get ready to cook
Make dough
In a food processor, pulse the flour and salt. Add the cold butter, cut into pieces, and pulse until the mixture resembles coarse crumbs. Gradually add the water, pulsing until the dough comes together. Wrap the dough in plastic wrap and chill for 30 minutes.
Prepare onions
While the dough chills, peel and thinly slice the onions. Remove the leaves from the thyme stems.
Caramelize onions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions, salt, pepper, and thyme leaves. Cook, stirring occasionally, until the onions are soft and caramelized, about 30-40 minutes.
Preheat Oven
Preheat the oven to 375°F (190°C).
Roll out dough
On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a parchment-lined baking sheet.
Assemble galette
Crumble the goat cheese over the center of the dough, leaving a 2-inch border. Spread the caramelized onions over the goat cheese. Fold the edges of the dough up and over the filling, pleating as needed.
Bake galette
Bake the galette in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
Serve
Remove the galette from the oven and let it cool for 10 minutes. Slice and serve warm as an appetizer or main course.
