Read instructions and get ready to cook
Preheat oven
Preheat the oven to 375°F (190°C). Grease a large baking dish with olive oil.
Season chicken
Season the chicken thighs with salt and black pepper on both sides.
Chop vegetables
Peel and chop the onions and carrots. Remove the seeds and stem from the red bell pepper and chop it into small pieces. Peel and mince the garlic cloves.
Heat oil
In a large skillet, heat the remaining olive oil over medium heat.
Brown chicken
Add the seasoned chicken thighs to the skillet and cook for 4-5 minutes per side or until browned. Remove the chicken from the skillet and set aside.
Sauté vegetables
In the same skillet, add the chopped onions, carrots, and red bell pepper. Sauté for 5-7 minutes or until the vegetables start to soften.
Add garlic and spices
Add the minced garlic, tomato paste, paprika, remaining salt, and remaining black pepper to the skillet. Stir to combine and cook for an additional 1-2 minutes until fragrant.
Add rice and broth
Add the rice to the skillet and stir to combine with the vegetable mixture. Pour in the chicken broth and bring the mixture to a boil.
Transfer to baking dish
Transfer the rice mixture to the prepared baking dish. Arrange the browned chicken thighs on top of the rice.
Bake casserole
Cover the baking dish tightly with foil. Bake the casserole for 45-50 minutes or until the rice is tender and the chicken is cooked through.
Let stand and serve
Remove the baking dish from the oven and let it stand, covered, for 5-10 minutes before serving.
