Preheat oven
Preheat the oven to 375°F (190°C).
Sauté onions
Finely chop the onions and sauté them in a large skillet over medium heat until softened and translucent.
Brown ground beef
Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and no longer pink.
Season the filling
Season the beef and onion mixture with salt, black pepper, and paprika. Remove from heat and let cool slightly.
Prepare egg mixture
In a separate bowl, whisk together the eggs and sour cream until smooth.
Melt butter
Melt the butter in a small saucepan or microwave-safe bowl.
Fill yufki sheets
Lay out a yufki sheet and brush it with melted butter. Spread a portion of the beef filling along one edge of the sheet, then roll it up tightly. Place the filled roll seam-side down on a greased baking sheet. Repeat with the remaining yufki sheets and filling.
Brush with egg mixture
Brush the rolled yufki pastries with the egg and sour cream mixture.
Bake
Bake the yufki rolls for 25-30 minutes or until golden brown and crispy.
Serve
Remove the baked yufki from the oven and let them cool for 5 minutes before serving.
