Brown the ground beef

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 6-8 minutes.

Prepare the vegetables

While the beef is browning, finely chop the onion, carrot, celery stalks, and garlic cloves.

Sauté the vegetables

Remove the browned beef from the pot and set it aside. Add the remaining 1 tablespoon of olive oil to the pot. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.

Add the garlic and tomato paste

Add the minced garlic and tomato paste to the pot. Stir and cook for 1-2 minutes until fragrant.

Return the beef and add tomatoes

Return the browned beef to the pot. Add the crushed tomatoes, beef broth, red wine, dried oregano, dried basil, bay leaf, salt, and black pepper. Stir to combine.

Simmer the sauce

Bring the sauce to a boil, then reduce the heat to low. Simmer the sauce, partially covered, for 1 hour, stirring occasionally. Remove the bay leaf.

Cook the pasta

While the sauce is simmering, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain the pasta, reserving 1 cup of the pasta water.

Combine the pasta and sauce

Add the cooked spaghetti to the pot with the Bolognese sauce. Toss to coat the pasta evenly, adding some of the reserved pasta water if needed to loosen the sauce.

Serve and enjoy

Divide the pasta with Bolognese sauce among six serving plates. Grate Parmesan cheese over each serving and enjoy hot.
