Prepare the peaches
Rinse, pit, and chop 2 pounds of ripe peaches.
Puree the peaches
In a blender or food processor, puree the chopped peaches until smooth.
Mix peach puree, sugar, and lemon juice
In a large bowl, combine the peach puree, 1 cup of granulated sugar, and 2 tablespoons of lemon juice. Stir until the sugar is dissolved.
Chill the peach mixture
Cover the bowl with plastic wrap and refrigerate the peach mixture for at least 2 hours, or until completely chilled.
Prepare the simple syrup

Combine peach mixture and simple syrup
