Preheat Oven
Preheat the oven to 400°F (200°C).
Prepare the vegetables
Slice the cherry tomatoes in half. Thinly slice the zucchini and yellow squash. Thinly slice the red onion.
Prepare the pesto
In a food processor, combine the basil leaves, pine nuts, garlic cloves, Parmesan cheese, olive oil, salt, and black pepper. Pulse until a smooth paste forms.
Prepare the salmon parcels
Cut four large pieces of parchment paper, about 12 inches square. Place one salmon fillet in the center of each piece of parchment. Spread the pesto evenly over the top of each fillet. Arrange the sliced vegetables on top of the pesto.
