Read instructions and get ready to cook
Thaw the puff pastry
Thaw the puff pastry sheet according to the package instructions. Preheat the oven to 400°F (200°C).
Prepare the salmon
Rinse the salmon fillet under cold water and pat it dry with paper towels. Remove any bones, if necessary. Cut the salmon into 4 equal portions.
Make the pesto
In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, minced garlic cloves, zest and juice of the lemon, olive oil, salt, and black pepper. Pulse until a smooth paste forms.
Assemble the puff pastry
On a lightly floured surface, roll out the thawed puff pastry sheet to a 12x12-inch square. Cut the pastry into 4 equal squares.
Spread the pesto
Place a salmon portion in the center of each puff pastry square. Spread about 2 tablespoons of the pesto over the top of each salmon portion.
Wrap the salmon
Fold the corners of the puff pastry up and over the salmon, pressing the edges to seal. Place the wrapped salmon on a baking sheet lined with parchment paper, seam-side down.
Brush with egg wash
In a small bowl, beat the egg. Brush the beaten egg over the top and sides of each puff pastry package.
Bake the pesto salmon puff pastry
Bake the pesto salmon puff pastry for 20-25 minutes, or until the puff pastry is golden brown and the salmon is cooked through.
