Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the spaghetti.

Prepare the pancetta and pineapple

Cut the pancetta into 1/4-inch thick slices, then cut the slices into 1/4-inch wide strips. Cut the pineapple into 1/2-inch chunks.

Sauté the pancetta

In a large skillet, cook the pancetta over medium heat until crispy, about 5-7 minutes. Remove the pancetta with a slotted spoon and set aside on a paper towel-lined plate.

Sauté the garlic and pineapple
