Prepare the Dates

Pit and roughly chop 2 cups of dates. Soak them in warm water for 10 minutes to soften, then drain.

Chop the Nuts

Roughly chop 1 cup of pistachios and 1/2 cup of almonds.

Blend the Ingredients

In a food processor, combine the softened dates, chopped pistachios, chopped almonds, 2 tablespoons of chia seeds, 2 tablespoons of coconut oil, and 1 teaspoon of vanilla extract. Process until the mixture is well combined and sticks together.

Press into Pan

Line an 8x8 inch square pan with parchment paper. Transfer the mixture to the pan and press down firmly with the back of a spoon or your hands to create an even layer.

Chill and Cut

Refrigerate the pan for at least 2 hours or until the mixture is firm. Remove from the fridge, lift the mixture out of the pan using the parchment paper, and cut into bars.
