Preheat your oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels. Season all sides with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
In a small bowl, mix together the Dijon mustard and honey.
Shell the pistachios if not already done. Place pistachios in a food processor and pulse until coarsely chopped. Transfer to a plate.
Peel and finely mince the garlic cloves.
Heat 1 tablespoon of olive oil in an oven-proof skillet over medium-high heat. Add the pork tenderloin and sear on all sides until golden brown, about 2 minutes per side.
Brush the mustard and honey mixture over the entire surface of the seared pork tenderloin.
Roll the mustard-coated pork tenderloin in the chopped pistachios, pressing gently to adhere the nuts to the surface.
Place the skillet with the pork tenderloin in the preheated oven. Roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
Let the pork tenderloin rest for 5 minutes before slicing. Slice into medallions and serve immediately.
